Overview: What is Potassium Metabisulphite?
A white, crystalline powder with a pungent odour, Potassium Metabisulphite is a product with both powerful and focussed attributes. An antioxidant and chemical sterilizer, it is used in wineries, breweries and much more.
The manufacture of Potassium Metabisulphite occurs by treating Potassium Hydroxide with Sulphur Dioxide, creating the below reaction:
2SO2 + 2KOH = K2S2O5 + H2O
Evaporating the solution leaves crystals of Potassium Metabisulphite for resale. Further changes can occur if the heat reaches 190oC, decomposing Potassium Metabisulphite into Potassium Sulphite and Sulfur Dioxide.
In terms of applications, Potassium Metabisulphite has several uses. One of the more common options is as a wine additive and disinfectant. As an additive, it helps preserve the wine whilst protecting colour and taste. Additionally, equipment gets treated with the same product to disinfect products before use. Another industry of use is as a mould and fungi inhibitor. During the stabilizing stage in brewing techniques, Potassium Metabisulphite helps prevent the stabilizing from growing mould. However, another option is to boil the wort, kill these microorganisms. Finally, other applications include a preservative in lemon juice and pickles, bleaching coconut creams and industrially as a cotton dye, tinting etched iron and finally, precipitating gold.
