What is Sodium Nitrate?

Also known as "Chile Saltpeter", Sodium Nitrate is a salt compound used in various applications across several industries. Whether a white granule or powder, it is in several industrial and food applications as a preservative, colouring agent and flavour enhancer. It is even in medicines, agriculture and much more. Its salty taste and odour, however, come from its sodium-based chemistry.

Manufacturing Sodium nitrate occurs through several processes. The most common occurs by creating Nitrogen Dioxide, then absorbing it with water to form Nitric acid. Combined with Sodium Hydroxide (Caustic Soda), it creates Sodium Nitrate before being blended en mass, with purification in various industries. The chemical reaction is as below:

HNO3 + NaHCO3 = NaNO3 + H2O + CO2

or

NH4NO3 + NaHCO3 = NaNO3 + NH4 + HCO3

A more "natural" route comes by mining Caliche Ore, where you find Sodium Nitrate amongst the ore. The locations of these ores are traditionally within Chile and Peru, hence the name.

Sodium nitrate has various applications across several industries, including food, beverage, pharmaceutical, cosmetic, and industrial sectors. The food industry commonly uses Sodium Nitrate as a preservative and colour fixative, especially in meat products such as bacon, sausages, and cured meats. The use of sodium nitrate in food products is regulated in the UK by the Food Standards Agency. In beverages, it is both a colourant and to flavour enhancer in some drinks.

In the pharmaceutical industry, Sodium Nitrate produces certain medicines, such as nitroglycerin, to treat heart conditions. In cosmetics, it becomes a preservative and a colourant. Finally, industrial applications range from thermal storage, pyrotechnics and smoke bombs to glass, enamel and rocket propellant manufacture. With applications, Sodium Nitrate is a common addition to fertilisers. As a water-soluble product, it is within a range of liquid feeds providing vital nutrition through its high nitrogen content.
