What is Mono Sodium Glutamate?
Commonly sold as a white to colourless granule, Mono Sodium Glutamate (MSG) is a common sodium salt of glutamic acid. Foods such as mushrooms, tomatoes and grapes have MSG within them naturally.
Production of MSG can occur through many methods. The most commonly used is bacterial fermentation. This process takes the culturing of bacteria with ammonia and a range of carbohydrates. As a result, it produces L-Glutamine before being processed into Mono Sodium Glutamate. The other primary process is via hydrolysis (breaking down cells with water) of vegetable proteins making an average of 30g L-Glutamine for every 100g of vegetable protein.
In terms of usage and application, MSG has one primary purpose – as an effective flavour enhancer in the food industry. More specifically, it works best in enhancing the profile of savoury foods. These can include soups, condiments, jerkies and far more. It is less effective on products with low sodium content, with its effects less marked when compared to higher sodium counterparts.
A common misconception is that MSG causes discomfort and headaches, despite repeated studies that have been unable to associate these with the consumption of this product. Blind consumption of placebo foods and MSG-laden food have yet to find any connection to prove or validate the beliefs people hold.
