What is Pectin?

Pectin is a polysaccharide found in the cells of a range of plants. It has a range of sources and comes in various weights and densities. This collection of sources makes it significantly more flexible when Pectin processes into an off-white to beige powder.

Manufacturing Pectin is created by adding plant material (typically fruit) into a hot, diluted acid, usually with a pH of 1.5 - 3.5. This acid then effectively extracts the Pectin from the plant matter. Afterwards, ethanol or isopropanol precipitates it before separation. Finally, the product gets washed, dried and milled to create the standardised and final product for sale.

As a thickening, gelling and stabilising agent, the mildly sweet product is a staple in food, cosmetics, pharmaceuticals and industrial products up and down the country. The most common application is a gelling agent in jams and marmalade. This ability creates a thick, consistent texture throughout the product.

Other food and beverage applications include protein drinks, yoghurts, fruit juices and baked goods. Beyond this, it is a pharmaceutical addition to healing salves, a cosmetics stabiliser in shampoos, moisturisers or even an additive in cigars.
