Overview: What is Baking Powder?

Baking Powder is a commonly used leavening agent used in a range of bakery products. It is usually manufactured by blending an acid, a base, and a buffer to prevent premature reactions. It is sold as a white to off-white powder and is used to add volume and lighten baked goods' texture by adding carbon dioxide to the mixture.
